Differences between Cádiz chicharrón and Chiclana chicharrón
The Cádiz chicharrón is usually consumed marinated like cold cuts. It stands out for having a fine, smooth flavor and not being too fatty, but this does not mean that its flavor is not intense and tasty enough. They are meat products that dissolve in the mouth.
On the other hand, in the case of Chiclana chicharrón, also known as traditional or fried chicharrón, it is made with pork belly or the pig's pella, and it should only be taken out of the refrigerator and heated in the microwave. In this case, the chicharrones first melt, and then the excess fat is removed.
