The Sainte-Maure de Touraine is an iconic cheese from the Centre, made exclusively from raw and whole goat's milk. Its elongated shape and ash-covered rind make it immediately recognizable. It is pierced in its heart by a rye straw engraved with the producer's name. Its white to ivory paste is fine and homogeneous, offering a creamy texture that becomes more crumbly over time. On the palate, it reveals sweet goat flavors, sometimes fruity or floral, with hazelnut notes when young. This cheese is often enjoyed with dry white wines from the Loire or light reds.
