Saint Félicien is an iconic cheese from Dauphiné, now primarily produced in Isère and Rhône. It comes in the form of a small flat cylinder with an ivory, sometimes downy, bloomy rind. Its soft, white, and very creamy paste is made from raw cow's milk, often enriched with cream, which gives it a melting texture and a mild, slightly salty flavor, with notes of hazelnut and stable. It pairs perfectly with a young white Burgundy or a Mâcon-Villages that brings freshness and roundness.
