This starter combines two types of green tea – predominantly Sencha, which provides freshness and lightness, and Chun Mee, which brings a delicate structure and a slightly sweet tone.

The ratio of 70% Sencha and 30% Chun Mee creates a harmonious base for kombucha with a clean profile and a milder acidity. The fermentation is stable, but the resulting flavor feels lighter than that of black blends.
