The Ashen Wheel is a raw milk goat cheese, handcrafted by Fromagerie Le Pic in Penne, Tarn. It is distinguished by its original ring shape and its ashen rind, obtained thanks to vegetable charcoal. This soft, lactic cheese is ladled into molds and then aged to develop a melting and supple texture. On the palate, it reveals delicate goat aromas, floral and vegetal notes, with a hint of underbrush and hazelnut. The Ashen Wheel is ideal on a cheese platter, accompanied by jam, honey, or a dry white wine such as Vouvray or Côtes du Rhône.
