The Piacentinu di Enna is an iconic Sicilian cheese, produced exclusively in the province of Enna. It is made from raw milk from sheep primarily fed on vetch, a plant that enriches the milk with flavors. This cheese is distinguished by the addition of wild saffron directly into the milk, giving it a bright yellow color and a unique aroma. Black peppercorns complement its aromatic profile, adding a spicy and warm touch. Its texture is compact and becomes firmer with aging. It pairs perfectly with young white or red wines, and pear or quince chutneys.
