The pork skin offered by Maison Lascours comes from Tarnais pigs sourced directly from the breeders of A.P.O (Alliance Porci d'Oc), a partner of the Roussaly cutting workshop located in Lacaune. Choosing pigs from the South West for our skin and other pork cuts allows us to guarantee you pork of increasingly refined quality. Pork skin is not just fat; it is actually the skin of the pig. Generally, pork skin is consumed to enhance a good cassoulet. However, there are many possible uses for it; you can also enjoy this fried pork skin, similar to duck cracklings. Butcher's tip: Cook your pork skin gently for 2 hours in broth or sauce so that it becomes tender and gelatinous. You can also roast it in the oven at 200 °C for 30 minutes to achieve a crispy and flavorful texture.
