The Very Fruity Comté AOP is the expression of Jura know-how. Aged in our cellars, it is made from raw milk from Montbéliarde or Simmental cows. Its yellow paste is dense yet melting, sprinkled with tyrosine crystals that crackle under the bite. On the palate, we find roasted almonds, hazelnut butter, candied citrus, and sometimes a hint of leather or coffee. This Comté is ideal for discerning enthusiasts, to be enjoyed alone or on a cheese platter. For a beautiful pairing, accompany it with a traditional white wine or a Jura Savagnin, whose oxidative notes and aromatic power echo the richness of the cheese.
