Aging: Between 4 and 7 months. In the last aging period, the cheese is bathed in olive oil and Oloroso sauce to enhance its incredible flavor and aroma.
Intensity: medium due to its special aging and being coated with Oloroso sauce.
Rind: natural coated with oil and Oloroso sauce.
Characteristics: white cheese with an intense flavor on the palate and firm texture. Bathed in Oloroso sauce.
Packaging: vacuum packed.
Type of milk: pasteurized
Aged in Oloroso sauce, a crafted dense and aromatic reduction of the finest Sherry Vinegars. A pleasure for all the senses.
