We start with the tasting of the semi-cured cheese, which has an aging of less than 2 months and is characterized by being softer and more tender than the cured cheeses.
The cured cheeses have an aging of 4-7 months, less tender than the semi-cured and fattier. Their flavor is enhanced. In this case, we include the cured cheese and the cured cheese in wheat bran, known as emborrado. Two different ways to finish their aging.
To conclude the tasting experience, we have our cheese in lard and the cured cheese in oloroso sauce. Two of the most characteristic cheeses from El Bosqueño.
