The chanterelles are shipped in a special box for cold transport. Morphology of the chanterelle Commonly known as chanterelle, Cantharellus cibarius is a uniform egg-yellow color. It has folds (not gills), decurrent. The size of its cap ranges from 1cm to 12cm, convex in the center or flattened, cup-shaped with a rolled, wavy, sinuous, and lobed edge. Thick and fleshy texture. Homogeneous (the cap and stem are not differentiated). Its stem is thick, cylindrical, and fleshy, widening at the top. Its flesh is white and yellows at the edges. It is compact and slightly fibrous, very difficult to spoil. Its pleasant peach aroma, its mild sweet taste, and the special consistency and texture of its flesh make the wild chanterelle a highly valued mushroom in the kitchen.
