Morphology of cow tongue Medium size, up to 12cm, slightly fleshy cap, irregular shape, convex but then flattens, wavy margin. It has no gills, but rather pointed spines. Color beige-cream or yellow-orange (under broadleaf trees) or yellow-whitish (under conifers). Hymenium with spines or prickles, dirty white or cream-yellowish in color, fragile, closed, not decurrent. Short and eccentric stem, the color of the spines. Firm but fragile and brittle flesh, with white tones that turn yellow or cream. Pleasant fruity smell. Curiosities of cow tongue Habitat: Mixed forests of all kinds. Acidic soils. Season: From August to Autumn and the beginning of Winter. Recipes for cow tongue Remove the bitter spines from the hymenium and cook young specimens. Remove the cooking water, which can make the stew or scramble bitter. Very good with potatoes in green sauce or with rice. With ham. Seasoning for meats and fish. In garlic. Hardly infested with worms. Cleaning cow tongue With the help of a knife, cut the lower part of the mushroom stem to avoid dirt residues. Then, with a brush and/or a damp cloth, carefully clean the top and bottom of the cap.
