The ganache is made with a blend of Ol Sciür, Piedmont cream, and Valrhona Opalys chocolate, and it replicates the tasting "levels" of cheese: first the acidity of red fruits, then the central body of the cheese, between sweet, sour, and savory; finally, the sweet note of cream and white chocolate, which becomes the fragrant background of the typical "nose return" of the Blues, and which here blends with all the aromas present in the aging of Ol Sciür.
