Raw and natural - our Raw Fermented Eggplants in Olive Oil can be an excellent appetizer on toasted bread. Processed without thermal treatment, with a hint of fresh herbs, garlic, and extra virgin olive oil.
First, we gently slice the eggplants, salt them, and weigh them down, then allow them to rest for 24 hours. This is followed by a gentle pouring of a special mixture of vinegars and spices, we weigh them down again and let them rest for another 24 hours. On the third day, we gently preserve the eggplants in olive oil with aromatic herbs and spices. This harmony of flavors is excellent as an appetizer or snack.
