Big IPA since 2017 We first brewed Big IPA in 2017. The name Big comes from the high alcohol content and large amount of hops. This autumn seasonal beer is brewed once a year. Each year we seek a slightly different path to extract as many fruity aromas and flavors from the ingredients as possible. This year's version: four stages, three yeasts This time, the focus is on even more hop extract, which we add in four stages. Fermentation takes place with three types of yeast. This year's version is without Phantasma; this ingredient from grape skins was part of the previous version, not the current recipe. About triple IPA Big IPA builds on a rich, candy-like body and a pronounced hop character. The sweetness supports the hops, while the bitterness is mild but persistent, developing into a long-lasting aftertaste. Top and bottom fermentation Top fermentation is mainly associated with ale-type beers and the yeast Saccharomyces cerevisiae, which typically ferments at around 15 to 25 °C. Bottom fermentation is mainly associated with lagers and the yeast Saccharomyces pastorianus, which prefers temperatures around 5 to 10 °C.
