In craft brewing, imagination knows no bounds, but sometimes we don't even need it, as beer must be brewed along the defined path dictated by the style guidelines. In some cases, precision and knowledge of limits prevail over creativity. We are talking about classic beer styles that offer comfort of familiarity and refuge in simple decisions amidst the tyranny of too many choices. Among them is also a classic of the craft world — pale ale. Yes Boss is a light brew that surprises with fruity aromas of citrus and coconut, and caresses with a pleasant bitterness. A boss-like pale ale that contains a new variety of Slovenian hops, Styrian (Savinjski) Wolf. In terms of color and alcohol, it nicely follows the established style guidelines, but the whole is unique and pleasant. With a combination of hops, we achieved a unique taste that challenges other brewers to replicate it. A pleasantly caramel body and a short bitterness ensure that the glass empties itself. What does pale ale mean? This term means nothing more than light beer. But it is not so self-evident if we know that light beer was not always easy to make! About 200 years ago, the British first developed a new technology for malting barley. This allowed the malt to be unroasted, as it was no longer dried over an open flame, but in hot air. As a result, a nice light beer was created. With this invention, they boasted so much that they drew attention from afar by naming it pale, which means pale, light beer. At that time, dark porters and stouts predominated. What does it mean if beers are top or bottom fermented? Top fermentation is most often associated with ales. It is a method of alcoholic fermentation that occurs in beer when active yeast rises to the surface and forms a crown (a kind of yeast foam). It predominantly involves the yeast Saccharomyces Cerevisiae, which is colloquially referred to as ale yeast. Such yeasts prefer higher fermentation temperatures, approximately from 15 to 25 degrees. Conversely, bottom-fermenting yeasts are associated with lagers. This fermentation occurs at the bottom of the vessel. It predominantly involves the yeast Saccharomyces Pastorianus, or colloquially, lager yeast.
