Bohemia ham is a unique butcher's product and our king among hams. It consists of a whole bone-in pork ham, where selected pork thighs are prepared with a special cut. They are then dry-salted with coarse sea salt for several weeks and left to mature. After the salting process is completed, the thighs are carefully washed and moved to the smoker for 48 hours to be smoked with fine beech wood smoke. Once golden-brown, they are transferred to aging chambers for 12 months, but can also be aged for up to 24 months in a controlled climate (temperature, humidity, air circulation). During the aging process, they lose a minimum of 35% of the original weight of the meat. After aging, the process of expert bone removal and dividing the ham into several parts suitable for slicing and vacuum packaging for optimal preservation takes place.
