The San Martiño or Galician San Pedro is a little-known fish but with magnificent flavor and firm texture that competes with others of higher price; it can be compared to the turbot, although the San Pedro usually has more bones.
It is known as Galician San Pedro or San Martiño due to the legend told in the Gospel of Saint Matthew, which states that the two round spots on each side are the fingerprints of Saint Peter, who, by God's order, caught the fish to retrieve a piece of gold from its mouth to pay the temple tax.
It is a Galician fish with white and semi-fat meat, and although its external appearance is somewhat peculiar, its interior is a marvel. It inhabits both rocky bottoms and underwater meadows and sandy bottoms, where it can sometimes bury itself. It lives in waters at depths ranging from 10 to 100 meters, although it can be found up to 400 meters.
It is estimated at about 350-450 g. per person (gross weight), where the net portion will be approximately 200-250 g.
Its best time to be consumed is around November 11th. For this reason, in the north of Spain, it is known as San Martín.
