Differentiation: In each of them, the vine behaves differently, so the fruit is also different. There are different varieties that feel more comfortable in one type of soil or another. There is no ideal terroir that can be applied to all grape varieties.
Due to the globalization of wines, today we find thousands of references that are very similar to each other, where the offer has been reduced to a very homogeneous style, lacking its own personality, regardless of its origin or varietal. All this is due to the use of the same winemaking techniques (such as the use of selected yeasts and enzymes). In viticulture, there is also an incredible obsession with planting foreign varieties (usually of French origin), disregarding those that have always been in the area.
In this way, many small producers are creating great wines that seek to study what sets them apart starting from the beginning: climate, soil, grape varieties, cultivation methods, and winemaking.
The DO Ca Rioja has three areas with differentiated viticultural characteristics: Rioja Alta, Rioja Alavesa, and Rioja Oriental (until 2018 known as Rioja Baja). With this wine today, we can talk about a fourth production area, Rioja Altísima.

The aging is done in French oak barrels of various years depending on the wine. Through an appropriate aging process, in which oak wood plays a decisive role, the Rioja wine experiences a favorable evolution that enhances its virtues and gives it new aromatic and flavor characteristics.
