Cut from a breed raised at a slow pace in the Galician coastal pastures, this piece is marked by buttery yellow fat, notes of dried fruits, and a juicy texture, revealing the Atlantic terroir. Galician beef is renowned for its natural marbling and the strength of its aromas. This bone-in sirloin takes advantage of these qualities, enhanced by a dry aging of about 28 days. The bone, intentionally retained, helps concentrate the juices during cooking and accentuates the length on the palate. A meat full of character, which has earned the breed the title of 'best meat in the world' by BEEF magazine! Butcher's tip: Take the piece out of the refrigerator 45 minutes before cooking. Heat your pan with a bit of butter or neutral oil, then sear each side for 2 to 3 minutes over high heat. Let it rest for 5 to 7 minutes under aluminum foil before serving to retain all its juiciness.
