Dehydrated mushrooms: what they are, how to hydrate them, and tips for cooking them
Dehydrated mushrooms are a great solution for those cooks who want to make their signature dishes with out-of-season mushrooms. Nothing surpasses the freshness of freshly picked mushrooms, but we know that most mushrooms in Spain only grow during the autumn months… so for the rest of the year, consuming dehydrated mushrooms is a great option.
How is a mushroom dehydrated?
The main reason for dehydrating a mushroom is its preservation. It is one of the best solutions for preserving mushrooms, as it does not lose many of its fresh qualities, reduces in size, and allows for more mushrooms to be stored in less space.
At the Colmado de Ezcaray, we dry the mushrooms in specialized ovens for this process. If you want to dehydrate mushrooms at home, the process is similar but with conventional ovens. All you need to do is arrange your mushrooms on the tray of your oven, ensuring they are not too close to each other. Then, open the oven to no more than 100º and check them until they are properly dehydrated (the time may vary depending on each mushroom). Don't worry if the mushrooms lose a lot of volume: this is normal, as during this process they can lose almost half of their volume. This is due to the porous structure of all mushrooms and the large amounts of water they retain.
If the volume of mushrooms to dehydrate is small, you can also choose to let them dry outdoors, in a well-ventilated space and separated from each other.
As a reminder, mushrooms should always be cleaned before proceeding to dehydrate them.
