The rind of Ossau is regularly washed with salted water and then with plain water, giving it a pink and moist crust. All of its production is done by hand, with no mechanical intervention. To enjoy it best, nothing pairs better with this Ossau than a fruit jam with acidic notes, preferably a black cherry jam, although some may prefer a citrus jam. This Ossau, like all the other cheeses we offer, comes from one of the best cheesemakers in France, a Toulousain who is also the best craftsman in France, the Xavier cheese dairy.
