The Wagyu beef chuck flap, also known as the chuck tail flap, is a rare and delicate cut, long reserved for high-end restaurants and steakhouses. Taken from the top of the chuck, this cut is distinguished by a tenderness similar to flank steak, combined with elegant marbling and a unique depth of flavor. On the palate, the meat offers buttery notes, hints of hazelnut, and a melting texture that will delight lovers of juicy and intense cuts. Our chuck flap slices come from Japanese Black cattle, carefully raised within the Westholme cooperative in northeastern Australia. This rigorous breeding allows us to offer what we consider the best Wagyu outside of Japan. Thinly sliced, this cut is suitable for quick and seared cooking. Perfect for a simple tasting moment, but with absolute indulgence. Butcher's tip: take the meat out 30 to 45 minutes before cooking. Sear over high heat for 2 to 3 minutes on each side, add a handful of salt, and enjoy without any frills.
