This semi-cured soft cheese is made with raw milk from Campo Capela cows, standing out for the remarkable maturation of its natural rind, which is hard and compact, and completely edible. This rind is infused with a blend of coffee and cinnamon, giving it a unique personality without compromising the characteristics of its interior, which remains soft with a delicate flavor featuring hints of yogurt and cream. For pieces of approximately 400 g, the maturation period is 20 days.
This cheese was awarded the Innovation Prize at the A Coruña Gastronomic Forum in 2017. Additionally, in 2018, it was honored with the gold medal at the World Cheese Awards held in Norway. In November 2021, it received another prestigious recognition by obtaining the Silver Medal at the World Cheese Awards 2021, held in Oviedo.
