Butcher's tip: take the ballotine out of the refrigerator 15 to 20 minutes before tasting so that the foie gras regains its softness and the Espelette pepper expresses its aromas. Cut clean slices using a fine-bladed knife passed under hot water, then serve on lightly toasted bread with onion confit or a few balsamic vinegar pearls.
