Raised in the temperate pastures of Galicia, this breed of cattle benefits from a natural diet based on fatty herbs and iodized by the Atlantic spray. The animals, slaughtered between 8 and 15 years old, develop a dark red meat with exceptional tenderness and aromas of butter, hazelnut, and dried fruits. A dry aging process of about 28 days enhances this gustatory richness, concentrating the flavors without ever altering the juiciness. Butcher's tip: for perfect cooking, take the T-bone out of the refrigerator one hour before. Sear it over high heat for 2 to 3 minutes on each side in a pan or on a grill, then finish cooking over low heat or in the oven, according to your preference.
