Presentation Whole piece — 3.5 kg · €94.30 How to cook Galician octopus at home The Galician trick: freeze the octopus 48 hours beforehand to break the muscle fibers without the need to hit it (or hit it vigorously against a hard surface). Boil plenty of water with salt and bay leaves. When it boils strongly, 'scare' the octopus three times by dipping it in and taking it out before letting it cook completely. Cook for 45-50 minutes for a 3.5 kg piece. Poke with a thin skewer in the thickest part to check the doneness: it should go in without resistance. Let it rest for 15 minutes outside the water before cutting. Preservation Keep refrigerated between 0 and 4°C. Consume within 24 hours. It can also be perfectly frozen for later use.
