The Galician sole (solea solea) is the king of flatfish as it is the most abundant in our marine grounds.
The wild Galician sole is very similar to the acedia, which is why they are often confused with each other since the head and shape are exactly the same. To determine whether it is Galician sole or acedia, we should look at the color as the sole is usually completely brown or brown with green spots, while the acedia is usually very light brown with many black spots. Additionally, the acedia does not grow much (300-400 gr) while the Galician sole can weigh up to 2kg.
Galician sole ideal for our diet
It is a Galician fish that everyone should include in their weekly diet as it has very little fat and contains many essential proteins (up to 25 gr per 100 grams). Furthermore, the Galician sole has very few bones, making it an ideal fish to introduce the little ones at home to the world of fish.
The best way to prepare this fish from the Rias Baixas is grilled or fried, although it can also be baked. When cooked, it has a white and firm flesh with great flavor.
