The sand sole (pegusa lascaris) is a flat fish belonging to the sole family, better known in Galicia as Acedía. The acedía is a flat, white fish with an oval body that inhabits the sandy bottoms of the Atlantic coasts.
The Galician acedía or sand sole is very similar to the Galician sole, which is why they are often confused with each other since the head and shape are exactly the same. To determine whether it is acedía or sole, we should look at the color as the acedía is usually light brown with many black spots, while the sole is typically completely brown or brown with green spots. The acedía does not usually grow much (300-400 gr) while the Galician sole can weigh up to 2kg.
In the past, the sand sole or Galician acedía was an alternative for people who could not afford the Galician sole as it was classified as a second-category fish and its price was much lower. Nowadays, the acedía is still a bit more economical than the sole, but they have almost the same gastronomic value, with some people even preferring this Galician fish over the sole.
Galician Acedía (Sand Sole) Ideal for Our Diet
It is a Galician fish that everyone should include in their weekly diet as it has very little fat and contains many essential proteins (up to 25 gr per 100 grams). Additionally, the acedía or sand sole is an ideal fish for children as it has very few bones, making it easy to remove fillets with excellent flavor and texture.
The best way to prepare this fish from the Rias Baixas is grilled or fried, although it can also be baked. When cooked, it has white, firm flesh with a mild and delicate flavor.
