Teff has a very high nutrient content compared to some classic types of grains such as wheat, rye, barley, corn, etc. It is rich in essential fatty acids, has a high mineral content (calcium, phosphorus, iron, potassium, zinc, and magnesium), and a high protein and vitamin content. It contains all essential amino acids, making it self-sufficient as a whole food, and its potential is also highlighted by its high fiber content.
Compared to other grains, teff has a much higher percentage of bran and germ, making it a very good source of dietary fiber, protein, iron, amino acids, vitamin C, and calcium. Teff flour is used to make the famous “injera” – bread that Ethiopians eat every day.
Teff porridge (with a grain quantity of about 1/4 cup) contains 180 calories, 7 grams of complete protein, and 4 grams of dietary fiber mostly in the form of resistant starch that feeds beneficial gut bacteria. Teff provides 25 percent of the daily magnesium requirement, 20 percent of the iron requirement, and 10 percent of the calcium requirement. It is also the only grain that provides 88 mg of vitamin C per serving!
One cup of cooked teff contains an incredible 123 mg of calcium.
