Teff, lat. Eragrostis tef - is the smallest grain in the world, measuring less than 1 mm, and is known as a highly nutritious gluten-free grain of incredible nutritional value. It belongs to the grass family and originates from Ethiopia, where many famous long-distance runners owe their endurance to teff!
With today's widespread interest in "ancient grains" that have remained unchanged in terms of selective breeding/genetic modifications, teff is an excellent example that is gaining more users worldwide due to its highly nutritious composition and unchanged cultivation type.
Teff is most commonly used in two forms: light teff and brown teff (although originally there are three varieties of teff – white, brown, and red). Nutritionally, they are approximately similar in value, with brown teff providing a stronger nutty flavor.
