Butcher's tip: Oven cooking: preheat to 160 °C (fan or rotisserie). Season with salt and pepper and place the roast in a suitable dish. Allow approximately 1 hour of cooking per kilogram, regularly basting with its cooking juices to preserve its tenderness. Flavor tip: you can deglaze the bottom of the dish at the end of cooking with a little apple juice or armagnac for a sweet and fragrant sauce.
