The paste, soft and compact, features small holes and an even distribution of the spice. The delicate aroma of the milk perfectly combines with the balanced flavor of black pepper, which adds a slight spicy note without overpowering the creaminess of the cheese. The minimum aging is 60 days, during which the Campì develops its characteristic balance between sweetness and spiciness.
