Quadrello is a soft and raw buffalo cheese with a washed rind, inspired by typical Lombard stracchini. Made with only pasteurized buffalo milk, it has a minimum aging of 30 days. Its washed rind may appear slightly moist, with a color ranging from orange to hazelnut, sometimes with grayish streaks. The paste is soft and elastic, with a more consistent and fatty central part that has the aroma of cooked milk and herbs. Beneath the rind, the texture is softer and releases an underbrush aroma. The taste is full and enveloping, thanks to the creaminess of the paste, while also being fresh and aromatic, inviting consumption.
