Morphology of the Mountain Eel: Small mushrooms (between 2cm and 8cm), trumpet-shaped with a hollow center, uneven, curled, and irregular edges. Fibrous skin, usually yellowish with a more orange background. It has folds that extend down to the stem. Its characteristic stem measures between 2cm and 6cm long, irregularly rounded, hollow, smooth, and shiny. The flesh of the Mountain Eel is very fine, fibrous, and flexible. Its aroma is delicate and fruity.

Curiosities of the Mountain Eel Lutescens: Habitat: It grows in calcareous pine forests, especially on the north side, which is more humid and mossy. It appears in abundant groups, camouflaged among the moss undergrowth. It does not rot. Season: From September to December, it is resistant to occasional frosts. Note: Do not confuse Cantharellus lutescens with another mushroom from the same Cantharellaceae family: Cantharellus tubaeformis, which is darker in color, has less and finer flesh, and a weaker smell.

Recipes with Mountain Eel: Highly valued in cooking, it is a good ingredient for soups, rice dishes, meat stews, fillings, or scrambled mountain eels, among many other dishes. It can also be dried.

How to clean the Mountain Eel Lutescens? The best way to clean them is with a damp cloth. Do not use a brush because its stem is hollow to the bottom and may lose its shape. Only in cases where there is a lot of dirt, they can be cleaned with water, soaking them for a few minutes.
