Cured Sheep Cheese with Sol de Naranja Wine from Bodegas Gallardo in Vejer de la Frontera, traditionally made with sheep's milk from the Sierra de Cádiz.
Aging: Between 4 and 7 months. In the final aging period, the cheese is bathed in olive oil and balsamic cream of Sol de Naranja wine to enhance its incredible flavor and aroma.
Intensity: medium due to its special curing and being coated with balsamic cream flavored with Sol de Naranja wine.
Rind: natural, coated with oil and Sol de Naranja wine.
Characteristics: white cheese with an intense flavor on the palate and firm texture. Bathed in balsamic cream flavored with Sol de Naranja wine.
Packaging: vacuum packed.

Sol de Naranja wine is a special wine from Bodegas Gallardo. It is a naturally sweet wine with oxidative aging. Oranges are macerated, yielding nuances of matalauva, cardamom, dried apricots, orange blossom, along with the usual aspects of oxidative aging such as nuts. Very characteristic flavors and aromas are obtained with unmatched harmony. Cheese cured in balsamic cream flavored with Sol de Naranja wine resulting from the joint texturization of Sol de Naranja wine, xanthan gum, and grape must caramel.
