We immediately store the wild bitter lemon in unrefined salt after harvesting, where it slowly ferments. Both the salt and the lemon pieces can be used as an addition to various dishes, salads, grilled foods, and grilled meats. We have added a pinch of spices to the salt, which further enriches the flavor.
