Every bite of Strachitunt is a journey into the past, a flavor that tells the story of Val Taleggio. This cheese, whose name means “round stracchino,” comes from a centuries-old tradition. It was the cheese that every bergamino (the local shepherd) made at home, perhaps due to a brilliant intuition or maybe a fortunate “mistake.” We continue to make it exactly as it was done back then: using the technique of double pasta with warm milk, without the addition of cultures.
