Honey candy recipe
- 1 cup of white sugar
- 1 cup of water
- 1 cup of honey
- Juice of 3 lemons
- 1 tablespoon of ground ginger (10 g)
- We put all the ingredients in a saucepan over medium heat.
- Mix with a whisk while everything heats up.
- When foam appears on the surface, we reduce the temperature and continue stirring until it reaches 150 or 155 °C. If you have a kitchen thermometer, insert it to check the temperature.
- If you don't have one, we can check if it's ready by dropping a few drops of the mixture into a glass of very cold water; if it solidifies as soon as it hits the water, it's ready.
- Let the mixture cool and pour it into a candy mold previously greased with oil. Leave it in the refrigerator until it solidifies completely.
- Once they have hardened, unmold the candies and roll them in sugar so they don't stick together.
- We store them in the refrigerator.
