The Truffled Festive Menu includes: Duck foie gras semi-cooked – Maison Lascours Selection - 400 g: a melting foie gras with a subtle and balanced taste. Family Dandieu Capon – ready to cook - 3 kg: a free-range poultry raised outdoors in the Landes, known for its tender and flavorful meat. Truffle stuffing - 500 g: to be inserted into the capon before cooking, for a touch of elegance and a delicate aroma. Truffle mashed potatoes - 4 x 400 g: a creamy side dish with refined aromas, perfect to accompany the poultry. The capon is delivered unstuffed: simply fill it with the provided truffle stuffing before cooking. A complete festive menu, ready to assemble, that combines the expertise of Maison Lascours and the aromatic richness of truffle. The assurance of a meal worthy of the finest tables. Butcher's tip: Stuff the capon with the truffle stuffing, then close it using cooking twine. Place it in a large dish, brushed with butter or oil, then salted and peppered. Oven cooking: Preheat to 160 °C. Allow about 1 hour of cooking per kilogram of capon. Regularly baste the poultry with its juices to keep it moist. At the end of cooking, let it rest for 30 minutes under a sheet of aluminum foil before carving. To elevate the meal, serve the capon hot, sliced, with its stuffing and the truffle mashed potatoes.
