Family Dandieu Capon – ready to cook - 1.8 kg: a free-range poultry from the Landes, raised outdoors, with tender and juicy meat. Foie gras stuffing - 500 g: to be inserted into the capon before cooking, for a fragrant and melting poultry. Truffle mashed potatoes - 3 x 400 g: a creamy and fragrant side dish, ideal for accompanying the poultry. The capon is delivered unstuffed: simply fill it with the provided foie gras stuffing before cooking. A complete and balanced festive meal, ready to assemble, that showcases the expertise of Maison Lascours and the richness of the Landes terroir. Butcher's tip for preparing the capon: Stuff the capon with the foie gras stuffing, then close it using cooking twine. Place it in a dish, brushed with butter or oil, then season with salt and pepper. Oven cooking: Preheat to 160 °C. Allow about 1 hour of cooking time per kilo. Regularly baste the poultry with its juices to preserve its tenderness. At the end of cooking, let it rest for 30 minutes under a sheet of aluminum foil before carving. To enhance the meal: Serve the sliced capon with its stuffing and the truffle mashed potatoes.
