Preparation of the capon: Take the capon and stuffing out of the refrigerator about 30 minutes before cooking. Gently fill the capon with the stuffing. Brush the poultry with a little melted butter or olive oil, then season with salt and pepper.
Oven Cooking: Preheat to 160 °C. Allow about 1 hour of cooking per kilo. Regularly baste the capon with its juices to keep it moist. Let it rest for 30 minutes under a sheet of aluminum foil before carving to ensure the meat remains juicy.
To enhance the meal: Serve the capon hot, accompanied by its chanterelle stuffing and a gratin, homemade mashed potatoes, or seasonal vegetables. A simple cooking juice will enhance its woody aromas.
