Premium beef prosciutto BRESAOLA is made over several months from selected parts of young cattle. To produce 100 kg of bresaola, 150 kg of beef is used. Its flavor is enhanced by a fusion of smoked beech wood along with thyme, anise, juniper, garlic, bay leaf, and cinnamon. The more mature it is, the tastier it becomes, just like a good cheese or an intense round red wine, with which it pairs well. It is excellent for preparing very delicate slices of beef carpaccio with shavings of parmesan, arugula, and a drop of quality olive oil.
The prosciutto is vacuum packed. After unwrapping, store the prosciutto in a cool environment, preferably hanging where there is a slight airflow.
