This monastic cheese, also known as Lingot de Saint Nicolas, is distinguished by its small brick shape and its ivory, slightly downy bloomy rind. Its melting and frothy paste reveals a very creamy texture in the mouth. It is flavored with thyme essence, which gives it a unique taste signature. This cheese is ideal for tasting with a white wine from the Pays d’Oc or a red from the Terrasses du Larzac.
