Originally, the Petit Romois is a soft cheese made from thermized cow's milk, mild and creamy. In this arranged version, it is manually rubbed with Marc d'Arbois, a typical brandy from the Jura vineyard, made from the lees of yellow wine or Savagnin. This rubbing gives the cheese a fragrant crust with amber reflections and a paste subtly infused with fruity, woody, and slightly spicy notes. On the palate, the creaminess of the cheese blends with the aromatic power of the Marc, creating a warm and distinctive alliance, without excessive alcohol. This cheese can be enjoyed cold, on country bread.
