The salted lacon requires an essential step before cooking.
- Prior Preparation: It is crucial to desalinate the lacon. Place it in a large container. It must be completely submerged in cold water.
- Desalting Time: The soaking should last between 24 and 48 hours. It depends on the desired saltiness.
- Water Change: Change the water at least twice a day. This ensures that the desalting process is effective.
- Cooking: Once desalinated, put it to cook. Use clean and abundant water. A good guideline is to cook it for 1 hour for each kilogram of weight of the piece.
Tip: The lacon is ready when the meat easily separates from the bone. You can cook the potatoes and the grelos in the same broth.
