The smoked sheep Tomme made from fir wood at the Ferme de la Demoiselle is a homemade creation, born in the pastures of Augisey by Caroline Grandclément. Carefully smoked by us, it embodies the authenticity of the Jura region. Its mild sheep flavor is enhanced by woody and resinous notes that evoke the surrounding forests. It can be enjoyed both on a cheese platter and in cooking, melted over potatoes or in a revisited croziflette. To accompany it, a Côtes du Jura Chardonnay will highlight its aromatic complexity without overpowering it.
