Our natural ferments receive special care, as we produce all our breads from them. We constantly monitor the acidity and temperature of the sourdough that is regenerated daily, giving our breads a quality that is hard to match with a very characteristic flavor. We achieve from it a bread exquisite in smell and taste and that also has a much longer shelf life than if we used artificial yeasts.
