How to cook fresh Northern bonito: In marmitako with potatoes and choricero pepper is the most classic stew from the north. The fillets grilled quickly, with good olive oil and coarse salt, are spectacular. Baked with tomato and onion in the Galician style. In homemade marinade to preserve for several days. Fresh bonito also allows for raw preparations: tartar or ceviche for the more adventurous.
