GUANCIALE is made from pork, specifically from pork jowls. The meat is salted and seasoned with garlic, rosemary, and pepper, and then dried slowly over several weeks. Tips for proper bacon storage: For short-term storage (even during sale), it is advisable to cover sliced Guanciale with food wrap to prevent unnecessary drying and color change. For long-term storage, repackage the product in a vacuum sealer and keep it in a cool place (2–5 °C) or hang it unwrapped in a well-ventilated dark cool chamber (be aware of drying and natural weight loss).
